Quick&Easy Pumpkin Pie Recipe

Alright. Autumn has arrived ! It is still surprisingly sunny and warm for the season but the air has changed and it definitely feels autumnal.
I’ve been cooking a bit more lately and the Man and I decided to make a pumpkin pie to keep on trend. I know that pumpkin pie is a love/hate thing but we love it !
We’re not really good at following recipes as we like to experiment but I’ll tell you as precisely as possible what we did to get a delicious completely homemade pumpkin pie.
The Pastry
We made the pastry ourselves. I usually never do that but I found a recipe that is ridiculously quick and easy to make.
You’ll need :
  • 300g flour
  • 1/2 tea spoon of salt
  • 3 table spoon of sugar (if you want sweet pastry)
  • 150g butter (diced and very soft – room temperature)
  • 80ml warm milk or water (or half-half – we used milk)
First combine the flour, salt and sugar and then rub in the butter. When it’s well mixed together add in the milk and work everything together (don’t work it too much).
You don’t need to leave it to rest or anything. Simply roll it on grease-proof paper with a bit of flour, lift it with the paper into your tin et voilà !
Don’t forget to poke a few holes with a fork before pouring in your filling.

 

The Filling
  • about 1kg of pumpkin peeled and diced
  • 2 eggs
  • 2-5 table spoon of sugar (to taste)
  • spices of your choice (nutmeg, cinnamon, ginger, cardamom, …)
  • a bit of cream (optional)
Firstly cook your pumpkin in boiling water until soft. When it’s cooked, drain it and blend it.
In a bowl mix the two eggs with the spices you chose and sugar until well combined. Spoon in the blended pumpkin (not too much at a time so you don’t end up with scrambled eggs) and mix together. Taste and add sugar, spices or cream to your liking.
When it’s well combined pour into the pastry and cook in a preheated oven (200°C) for about 30-40 minutes (until the pastry is golden).
Allow to cool for as long as you can wait and enjoy !

 

Good to know :

The type of pumpkin can make a massive difference. Some are a lot sweeter or a lot thicker. Some have less taste or are more watery. We already made two versions this autumn and they couldn’t have been more different. I don’t like the colour of this one but it tasted at lot sweeter than the first one. It’s just a matter of experimenting and finding the one you like the best.

You can decorate your pie with icing sugar, cinnamon (or another spice), whipped cream or pastry leftovers. As you can see I kinda ruined mine trying to do some fancy-a** geometric patterns but oh well. It was still delicious !
